I came up with this idea trying to use up some potatoes, veg and eggs. You can use any veg you have lying around really. I suppose it’s almost a Spanish Omelette with the potato in, just baked in the oven! After my Roasted Squash dish the other day, I feel like I’m really getting better at using up our lovely veg boxes!
Instructions
- Pre-heat oven to 190° (Fan).
- Bring a large pan of salted water to the boil. (I used an oven proof casserole dish to make it a one pan meal.)


- Add the potato cubes and chopped carrot and boil for 10 mins.


- Meanwhile, prep your veg.


- Drain the potatoes and carrots and return to the heat, adding a large glug of olive oil and the prepped veg. Season to taste with salt and pepper.


- Fry on a medium to high heat, being careful not to burn. Turn off the heat and add the beaten egg, giving a quick stir to ensure the egg is evenly distributed.
- Scatter the cheese across the top.


- Bake for 10 minutes, (or until the egg has just set.)
- Remove from the oven and serve with salad or crusty bread and butter.
