Delicious Baked Veggie Omelette.

I came up with this idea trying to use up some potatoes, veg and eggs. You can use any veg you have lying around really. I suppose it’s almost a Spanish Omelette with the potato in, just baked in the oven! After my Roasted Squash dish the other day, I feel like I’m really getting better at using up our lovely veg boxes!

Instructions
  1. Pre-heat oven to 190° (Fan).
  2. Bring a large pan of salted water to the boil. (I used an oven proof casserole dish to make it a one pan meal.)
  3. Add the potato cubes and chopped carrot and boil for 10 mins.
  4. Meanwhile, prep your veg.
  5. Drain the potatoes and carrots and return to the heat, adding a large glug of olive oil and the prepped veg. Season to taste with salt and pepper.
  6. Fry on a medium to high heat, being careful not to burn. Turn off the heat and add the beaten egg, giving a quick stir to ensure the egg is evenly distributed.
  7. Scatter the cheese across the top.
  8. Bake for 10 minutes, (or until the egg has just set.)
  9. Remove from the oven and serve with salad or crusty bread and butter.
